Carnival Cruise Line is rolling out "The Next Course," a comprehensive dining expansion featuring new restaurants, bars, and menu updates across its fleet beginning with Carnival Festivale in May 2027. Headlining additions include Emeril's Coastal Seafood, developed by Chief Culinary Officer Emeril Lagasse, alongside Hawaiian-focused Uku Lei Lei and Mediterranean restaurant Fetaccine. The Excel-class ship will debut French venue Le Bistro Musicale and bar concepts including The Spark, which pairs cocktails with live performances, and Mix, offering customizable drinks. Beyond specialty venues, the line is introducing Far East Eats and expanding barbecue options via Sunsation Point BBQ. Fleetwide changes include refreshed Main Dining Room selections, new Express Dining for quicker meals, and expanded family-friendly options. President Christine Duffy stated the initiative balances evolving guest preferences with maintaining familiar favorites. Similar enhancements will reach Carnival Tropicale in 2028.
